Read an interesting article on Paleo from the Mayo Clinic. It talked about Modern Vegetarianism and how many current vegetarians would be more appropriately labeled “breaditarians”. Modern vegetarian diets often rely heavily on processed carbohydrates such as white rice, potatoes, and white flour and sugars.
I’ve met many “vegetarians” who hardly eat actual vegetables. Ironic. The vegetarians with the most vitality are those who get a majority of their food from actual fresh produce. Not processed “vegetarian” bean dip and corn chips.
There is even a phenomenon called “The South Asian paradox [which] refers to the relatively high prevalence of coronary heart disease despite low levels of LDL cholesterol and low prevalence of obesity in urban vegetarians from India who consume a diet high in refined carbohydrates” [my emphasis added].
The article covers a lot of the research and the “why” better than I can. It’s not a difficult read. I highly encourage anyone to check it out.
